Cooking workshop for Hotel school Palestinian students

Ramallah, 22 November 2018 – 16 Hotel Management students at UNRWA Vocational Training School in Ramallah have participated in a cooking workshop organized by AICS Jerusalem and carried out by Chef Sara Barbara Guadagnoli, member of Italian Chefs Federation – Lady Chefs.

During the 4 hours course, students have been trained and supported in the preparation of traditional Tuscan dishes, which have been adapted according to the ingredients existing in the Palestinian market.  During the open buffet, the following dishes were served: zucchini spaghetti with celery cream, eggplant parmesan, maltagliati with white ragù of veal, stew with potatoes, trifle and strawberries with cream, in addition to a special focaccia (Palestinian pita bread) with eggs, zucchini and mint.

As a result of this successful initiative, a cookbook with Tuscan receipts adapted to Palestinian ingredients will be realized. Through a collection of photos and testimonies, the Italo- Palestinian fusion promoted by the workshop will be told.

This initiative falls neatly into the framework of the 3rd edition of the Week of Italian Cuisine in the world, organized in Palestine by the General Consulate of Italy in Jerusalem and that include events and tastings in Jerusalem, Nablus and Bethlehem.

The choice to collaborate with UNRWA and Vocational Training School highlights the Italian commitment in favor of Palestinian refugees, which in 2018 increased of 25% in terms of funds allocated at a regional level (from 11.8 millions of Euro in 2017 to 14.8), and reiterate the importance of vocational training for young Palestinians, especially women, within the framework of Gender and Economic development programmes that AICS Jerusalem manages.
